Ingredients
550g Sofie's Chouriço meat
1 ½ cups water (for the initial simmer)
½ cup water (to perfectly balance the rich gravy)
1 tbsp high-smoke point cooking oil
3 medium onions, cubed
2 medium potatoes, medium-sliced (optional)
1 tsp salt (only required if adding potatoes)
Method
1. The Sizzle & Sear
In a hot wok, combine the Chouriço meat, 1 ½ cups of water, and the sliced potatoes (if using). If you are using potatoes, sprinkle in the 1 tsp of salt at this stage. Cover the pot and cook over medium heat for 10 minutes. Keep an eye on the liquid to ensure the water hasn't completely evaporated, allowing the potatoes to cook until they are perfectly al dente.
2. The Caramelised Finish
Stir in the cubed onions, the cooking oil, and the remaining ½ cup of water. Cover the pot again for another 5 minutes, stirring occasionally to combine the robust flavors.
Finally, uncover the wok for the last 5 minutes of cooking. By this stage, the water will have completely receded, allowing the onions and meat to sizzle beautifully together in the oil, creating a gorgeous, deeply caramelized finish.
Serving Suggestions
Serve this intensely flavorful dish hot over a bed of fluffy steamed rice, pile it high into a crusty ciabatta bread sandwich, or roll it into a fresh wrap for an incredible meal on the go.
