Get ready for an explosion of rich, savory flavors! This vibrant stir-fry pairs tender, succulent meat with crisp, caramelized vegetables, all coated in a deeply aromatic, spiced glaze.
Ingredients
1 kg premium Meat: Rich rump beef, juicy chicken thigh, tender pork loin, or succulent lamb strips (thinly sliced across the grain for maximum tenderness)
4 tablespoon: Sofie's Roast Paste (our secret flavor bomb)
1 tablespoon: Salt (adjust to taste)
3 Medium Onions: Chopped into sweet, crunchy cubes
2 Crisp Capsicums: Cubed, adding a bright pop of color and sweetness
2 cloves: Fresh garlic, finely minced (optional, for a punch of warmth)
1 inch: Fresh ginger, finely minced (optional, for a sharp, zesty kick)
2 tablespoon: High-smoke point cooking oil (divided)
Method
1. Marinate and Infuse
In a large bowl, thoroughly massage the salt and Sofie’s Roast Paste into your meat slices. Ensure every single piece is draped in that rich, aromatic spice blend. Let it rest for 10 minutes, allowing the deep spices to penetrate and tenderize the meat.
2. Sear and Sauté
Heat 1 tablespoon of oil in a roaring hot skillet or wok over medium-high heat.
Toss in the cubed onions, letting them sizzle and sweeten for 3 minutes until edges turn a beautiful golden brown.
Stir in the optional minced ginger and garlic. Let them cook for 60 seconds until a gorgeous, mouthwatering aroma fills your kitchen.
Add the vibrant capsicum cubes, tossing them quickly for 1–2 minutes so they absorb the aromatics while retaining their irresistible, snappy crunch.
Scoop the veggies out and set them aside to keep them perfectly crisp
3. The Perfect Sear (The Star Ingredient)
Crank the heat up to high and add the remaining 1 tablespoon of oil to the same, seasoned wok.
Add your marinated meat. Hear that intense sizzle! Cook in batches if needed so the meat sears beautifully instead of steaming.
Beef, Lamb, or Pork: Flash-fry for 3–5 minutes until deeply browned, juicy, and melt-in-your-mouth tender.
Chicken: Sear for 5–7 minutes until caramelized on the outside and perfectly juicy on the inside.
4. The Finish (Glaze & Combine)
Any remaining marinade sauce in the wok, let it bubble rapidly and reduce for 1–2 minutes into a glossy, sticky glaze that hugs the meat.
Toss the golden onions and crisp capsicums back into the pan.
Give everything a dramatic, high-heat toss for 60 seconds to lock the flavors together.
Serving Suggestions
Serve hot over fluffy white rice, alongside a crisp green salad, or with warm crusty bread to scoop up the delicious sauce.
Enjoy!
