Get ready for pure comfort in a bowl! This mild curry wraps tender, juicy chicken pieces in a silky, coconut-infused gravy spiked with aromatic spices. It is rich, deeply comforting, and bursting with gentle, savory flavor without any harsh heat.
Prep time: 10 minutes
Marinating time: 5 minutes
Serves: 4–6
Cooking time: Chicken ~ 30 minutes
Ingredients:
1 kg Chicken: Succulent thighs, breasts
3 ½ tbsp: Sofie's Pot Roast Paste (our rich, aromatic flavor base)
1 tbsp: Salt (adjust to your preference)
1 Medium Onion: Finely diced to create a sweet, savory foundation
1 ½ cups: Creamy coconut milk (velvety texture)
½ cup: Water (to perfectly balance the rich gravy)
1 tbsp: High-smoke point cooking oil
Method
Marinate
In a large bowl, tumble your chicken chunks with the salt and Sofie’s Pot Roast Paste. Thoroughly massage the aromatic paste into the meat so every single piece is completely enveloped in flavor. Set aside to let the spices work their magic.
2. The Sizzle & Sear
Heat the cooking oil in a large, deep skillet or heavy-based pot over medium-high heat.
Toss in the diced onions, listening to them sizzle and sweeten as they cook until beautifully translucent and fragrant. Add the marinated chicken to the pan. Cover with a lid and let everything simmer gently in its own delicious juices for 5 minutes over medium heat, locking in the moisture.
3. The Creamy Simmer
Pour in the velvety coconut milk and water, stirring gently to lift up all the caramelized, savory bits from the bottom of the pot. Bring the curry to a gentle simmer. Leave it to bubble softly uncovered for 15 minutes over medium heat. Watch as the sauce transforms into a rich, glossy, golden gravy that beautifully hugs the tender chicken.
Serving Suggestions
Ladle this steaming, aromatic masterpiece over a generous bed of fluffy white jasmine rice to soak up that luscious coconut sauce. Pair it with warm, crusty bread or buttery roti to scoop up every last drop of the delicious gravy from your bowl.
Enjoy!
